What Phil's cooking up in October...

As Autumn sets in, the weather changes and the days get shorter, Autumnal reds and yellows come into play.

Our popular Beales fish pie makes a return in October, using fresh and locally sourced ingredients. English squash is at its best right now, which is why we use them in our chicken dishes. Our chicken is locally sourced and corn fed, providing a rich and flavoursome array of dishes, ideal for this time of year.

As we move further into Autumn, more game meats will become available on our A la Carte menu, including venison served with root veg and chestnut puree. Monkfish is a deliciously meaty popular fish being caught in Newly Bay in Cornwall, which we will be using to create a Monkfish tail dish wrapped in pancetta and served with polenta.

Mushrooms are in plentiful supply now, so will be featuring them heavily on our Autumnal menu, paired with chicory and candied walnuts.

Our desserts will be based on Autumnal berries, paired together with apples and pears. They are now at their best to be served in British desserts, including a homemade pear and mixed berry crumble with custard.
