What Phil's cooking up in September...

Head Chef at OutsideIn Restaurant, Beales Hotel, Hatfield

As September sees the end of the summer and the beginning of cooler weather we are offering some heart-warming, homely dishes on our Autumn OutsideIn menu.

Our home-made game pie topped with puff pastry reflects the weather change, as does our delicious carrot and coriander soup.

PlumWe will also be making good use of the British winter vegetable season - Jerusalem artichokes are back in season and we are using them in a potato and artichoke terrine with a goat’s cheese crouton and poached egg.

Stone bass is also being used this month, baked with fresh Thai spices and served with pak choi and coconut rice.

Line caught lemon soles are also very good being caught daily down in Eastbourne; we are char grilling them whole and serving them with a classic caper butter.

To finish, the British plums are back and we are roasting them and making them into plum and frangipane tart served warm with crème fraiche ice cream.
